Vigiriego (White)

Variety: Vigiriego (95%) and Macabeo (5%) . Grapes haversted in optimal ripe stage, high sugar contents, even acidity and maximun index of variety flavor. Vigiriego variety is a native crop imported by fenicious 2.500 years ago. This variety does not grow in any other part of the world but in the Alpujarra and the Canary islands.

Elaboration: Grapes are transported in small boxes and pressed very quickly and smoothly, extracting only the very first juice. Fermentation process is driven at very low temperature (16ºC)

Taste: A very special young white, different to any other. Apple and anise flavor. Palid yellow-green color with fine varietal flavor and nice fermentation reminiscence. Very high acidity typical of the variety.

Drinking: It is reccomended to drink cold between 8-10 ºC, along fish, cheese and any other food that complement its smooth flavor and taste.
